The lock screen camera shortcut feature in iOS 5 is a nifty little feature. It gives you easy and quick access to the Camera app from the lock screen when you double tap on the Home button.
But wouldn't it be nice if you could launch the app of your choice using this lock screen shortcut feature. AnyLockApp - a jaibreak tweak allows you to do exactly that.
Here's a brief description of the app from Cydia:
Change the lockscreen camera shortcut to open any of your apps! Works on iPhone and iPod touch.
After you have installed the free jailbreak tweak on your jailbroken iOS device from Cydia, you can select the app of your choice that you want to access from the lock screen shortcut via the Settings app (Settings -> AnyLockApp -> Open App).
The jailbreak tweak also overrides the icon of the camera app with the icon of the selected app.

If you also install CameraLocker, which is jailbreak tweak to make the lock screen shortcut appear without the need to double tap on the Home button.
Please note the jailbreak tweak works with iOS 5 or higher.
As always, let us know what you think of the jailbreak tweak in the comments.
